Cheddar (shredded)

Avocado

Flour tortilla (large)

- Step 1
Halve the avocado & remove the pit. Carefully slice the avocado & set aside. - Step 2
In a small bowl, crack & beat the eggs. - Step 3
On a pan over medium heat, add breakfast sausage. Break up the meat with a spatula. Cook, stirring 4-5 min until brown & crisp. - Step 4
Add diced potatoes. Sir, cover & cook 5-6 min. Uncover & stir. Transfer everything to a bowl. - Step 5
On the same pan, over low heat, add the beaten eggs. Season with salt & pepper. Scramble the eggs to your liking, about 2 min. - Step 6
Gently stir in the cooked potatoes & sausage. Sprinkle in the cheese & melt for 1 min. - Step 7
Heat a tortilla & scoop in the cheesy egg mixture. Top with a few avocado slices & a spoonful of salsa. Wrap it up & enjoy!
