Roasted Salmon with Tomatoes & Sausage

1 cup
Cherry tomatoes
3 oz
Chorizo (cured)
1/2 clove
Garlic
1/8 cup
Basil (fresh)
1/2 handful
Arugula

- Step 1
Preheat the oven to 450°F. Wash & halve the cherry tomatoes. - Step 2
Cut the sausages into thick slices. - Step 3
Add the cherry tomatoes, crushed or minced garlic, most of the basil (reserve some for garnish) & a drizzle of olive oil to a baking dish. - Step 4
Add the sausage slices, salt & pepper. Mix to combine. - Step 5
Lay the salmon over top the tomato-sausage mixture. Season the fish to taste. Bake for 15-20 min at 450°F, or until the salmon is cooked to your liking. - Step 6
Serve garnished with the remaining basil, the arugula & a drizzle of oil. Enjoy!
