A fancy & family friendly fish feast!
Stovetop, Frying pan, Pot (small), Food processor
Step 1
If using frozen cod, defrost it beforehand. Roughly chop the cod.
Step 2
Chop the parsley.
Step 3
Add the cod, parsley, beaten eggs, minced garlic & half the bread crumbs to a food processor. (You can also use an immersion blender with a mixing bowl!)
Step 4
Season with salt & pepper. Pulse the mixture without puréeing it.
Step 5
Place the remainder of the bread crumbs on a plate. Using your hands, form the blended mixture into balls. Roll each ball in the bread crumbs.
Step 6
Cook the rice according to the package instructions.
Step 7
Heat a drizzle of oil in a pan over medium heat. Add the breaded balls. Cook for about 5 min on each side. Slightly flatten them with a spatula after turning.
Step 8
Add the crushed tomatoes to the pan. Season with salt & pepper. Cook for 1-2 min.
Step 9
Fluff the cooked rice.
Step 10
Spoon the rice onto a serving plate. Top with the croquettes & sauce. Garnish with extra parsley (optional). Enjoy!
