Pesto

Mayonnaise
1 Leaf
Bibb lettuce

- Step 1
Preheat the oven to 400°F. Place the bacon & salmon on a parchment paper lined sheet tray. Drizzle a bit of oil on the salmon to prevent sticking. Season the salmon with salt & pepper. Roast in the oven for 15-18 min or until the bacon & salmon are fully cooked. - Step 2
In a small bowl, combine the pesto & mayonnaise. Set aside. - Step 3
Wash & slice the tomato. - Step 4
Remove the salmon & bacon from the oven. Carefully slice the salmon in half. - Step 5
Spread the pesto-mayo onto each slice of toasted bread. To assemble the sandwich, add the bacon, salmon, lettuce & tomato to one slice of bread. Top with the second slice of bread & enjoy!
