Fajita seasoning

- Step 1
Wash & slice the bell pepper into thin strips. - Step 2
Peel & thinly slice the red onion. - Step 3
Cut the salmon into 1 inch pieces & place on a dish. - Step 4
Add half of the fajita seasoning to the salmon & toss to coat. - Step 5
Heat a drizzle of oil in a skillet over medium heat. Add the bell peppers, sliced onion & remaining fajita seasoning. Add a few tablespoons of water to help steam the vegetables. Stir & cook for 4-6 min or until the veggies are nicely browned & softened slightly. Remove the veggies from the pan & set aside. - Step 6
Add another drizzle of oil & the salmon cubes to the pan. Cook undisturbed over medium heat for 5-7 min. Add another few tablespoons of water to the pan to create a light sauce. - Step 7
Add the veggies back into the pan & stir everything together. Season with salt & pepper. Remove the pan from the heat. - Step 8
Cover the tortillas with a damp paper towel & microwave for 10-15 sec to soften. - Step 9
Add the salmon & veggies to the warmed tortillas. Top with fresh cilantro, sour cream & a lime wedge if you have. Enjoy!
