  • Step 1
    To make the hard boiled eggs: Boil water in a large pot, add the eggs and cook for 6 minutes. Drain and put the eggs in an ice bath to stop the cooking.
  • Step 2
    Cut the avocado in thin slices.
  • Step 3
    Toast the bread.
  • Step 4
    Spread the cream cheese on the bread, add the smoked salmon and avocado.
  • Step 5
    Gently peel the eggs, cut them in half and add them to the toast.
  • Step 6
    Top with lemon juice, lemon zest, a drizzle of olive oil, salt & pepper. Enjoy!
