Greek Yogurt (plain)
1/4 clove
Garlic

Chives (fresh)

If using frozen salmon, defrost beforehand. Then remove the skin from the salmon, if needed. - Step 2
Prepare the couscous according to the package instructions. - Step 3
Preheat the oven to 400°F. Wash & cut the zucchini into thick rounds. Then cut into half moons. - Step 4
Cut the salmon into large chunks. - Step 5
Thread the salmon & zucchini onto skewers in an alternating pattern. - Step 6
Place the skewers on a parchment-lined baking sheet. Season with salt & pepper. Drizzle with olive oil. Bake for 10-15 min, or until the salmon is cooked to your liking. - Step 7
In a small bowl, mix together the yogurt, minced garlic, salt, pepper & a drizzle of olive oil. - Step 8
Add chopped chives to the couscous. Then fluff with a fork. - Step 9
Serve the skewers over a bed of couscous. Garnish with a dollop of yogurt sauce. Enjoy!
