  • Step 1
    Cook the pasta according to the package instructions. Rinse the pasta under cold water. Drain & set aside.
  • Step 2
    Cut the artichokes into quarters. Pit & slice the olives.
  • Step 3
    In a large bowl, combine the pasta, artichokes, arugula, lemon juice & olives. Add a drizzle of olive oil, salt & pepper. Toss it all together. Enjoy!
