Ramen Noodle Salad with Chicken

Romaine lettuce

Chicken breast

Green onion (scallions)

Precooked noodles (ramen)
2 tbsp
Peanuts
2 tbsp
Sweet chili sauce
1 tbsp
Rice vinegar

- Step 1
Boil a pot of water. Add the ramen noodles & remove from the heat. Set aside for 3-4 min until fully cooked. Drain & rinse the noodles in cold water to stop the cooking. Set aside. - Step 2
Heat a drizzle of oil in a pan over medium-high heat. Pat the chicken dry & add it to the pan. Season with salt & pepper. Sear 4-5 min on the first side, then flip over. Season the second side & sear until fully cooked, about 5-6 more min. Transfer the cooked chicken to a cutting board to rest. - Step 3
Wash & dry the lettuce. Slice into 1/4-inch shreds. - Step 4
Rinse & dry the scallions. Thinly slice. - Step 5
In a small bowl, combine sweet chili sauce & rice vinegar. If you have toasted sesame oil, add a few drops per serving. Mix it all together. - Step 6
Slice the chicken into strips. - Step 7
Add the peanuts to a plastic bag. Use the back of a cup to crush the nuts into small bits. - Step 8
Add the noodles to a dish. Top with shredded lettuce, scallions & chili sauce. Toss well to evenly coat. Arrange the sliced chicken on top with more sauce & crushed peanuts. Serve & enjoy!
