Spring mix lettuce

Feta cheese (crumbled)

Carrots (fresh)
1/8 cup
Walnuts
1 tsp
Honey
1 tsp
Whole grain mustard

- Step 1
Rinse & drain the canned lentils. If using dry lentils, cook according to the package instructions. - Step 2
Peel & grate the carrots. Or use pre-grated carrots! - Step 3
In a bowl, add mustard, honey & 1 tbsp of olive oil per person. Season with salt & pepper. Mix well to combine. - Step 4
In a salad bowl, add the greens, lentils, carrot, crumbled feta, walnuts & honey-mustard vinaigrette. Toss together & enjoy!
