Step 1
Preheat the oven to 350°F. Chop the room-temperature butter into small pieces.
Step 2
To make the dough, add the butter, flour, vinegar, salt & pepper to a mixing bowl. Mix together with your fingers until it forms a crumbly texture. Add splashes of cold water until it comes together into a ball. Set aside.
Step 3
Wash & slice the tomatoes. Grate the cheese. Peel & thinly slice the garlic.
Step 4
Flour a parchment-lined baking sheet. Roll out the dough into a circle about 1/4 inch thick.
Step 5
Arrange the cheese, tomatoes & garlic over the dough, leaving a border around the edges. Season with salt & pepper. Carefully fold in the edges of the tart. Add a splash of olive oil over top. Brush the crust with a beaten egg yolk.
Step 6
Bake for 50 min. Serve with pride!
