  • Step 1
    Preheat the oven to 350°F. To make the dough: add the flour, a pinch of salt and butter to a bowl. Mix, using your fingers, until you reach a sandy consistency.

    Add 1/3 cup water and mix together to form a ball. Set aside.
  • Step 3
    Cut the zucchini in thin, round slices.
  • Step 4
    Cut the red onion and tomatoes in thin slices.
  • Step 5
    Coupez les tomates en rondelles.

    Using a rolling pin, roll out the dough on a sheet of parchment paper.

    If the dough sticks to the rolling pin, add some flour. Roll in a circle until the dough is 1/4 inch thick.

    Spread a thin layer of mustard on the dough, leaving a 2 inch border.

    Add the vegetables, salt, pepper, herbs de Provence and a drizzle of olive oil.
