Ingredients for 1 galette

Rinse the cherries, cut them in half and remove the pit.

Preheat the oven to 400°F. In a large bowl, mix the flour, sugar, and a pinch of salt. Melt the butter for 15 seconds in the microwave and add to the bowl. Mix until well combined.

Form the dough into a ball and place it on a piece of parchment paper.

Roll the dough into a circle, about 1/4 inch thick.

Sprinkle the almond flour over the dough.

Spread the cherries on top of the dough, leaving a 1-2 inch border.

Fold in the edges of the dough and press down lightly.

Optional: add a few dabs of butter and some cane sugar on top of the dough. This will lightly caramelize in the oven.

Bake for 30 minutes or until the edges are golden brown. Optional: Serve with vanilla ice cream. Enjoy!
