Yellow onion
2 slices
Smoked salmon
1/8 cup
Sour cream

- Step 1
Peel the potatoes & onion. - Step 2
Grate the potatoes & onion using a box grater. - Step 3
Wrap the grated potatoes & onion in a clean kitchen towel. Squeeze out all that excess liquid! - Step 4
Add the drained mixture to a mixing bowl. Add the flour & eggs. Season generously with salt & pepper. Mix to combine. - Step 5
Heat a drizzle of vegetable oil in a pan over medium heat. A non-stick skillet would be great here! Add a large spoonful of the potato mixture. Press it down with back of spatula to flatten it into a pancake. Repeat with the remaining mixture. - Step 6
Cook for 3-5 min, or until golden brown. - Step 7
Flip over the pancakes. Cook for 3-5 minutes, or until cooked through & crispy. - Step 8
Serve with the smoked salmon slices. Add a dollop of sour cream. Garnish with fresh chives (optional). Enjoy!
