Step 1

Preheat oven to 450°F. Wash the zucchini & slice it into thin rounds. (Use a mandoline if you have one!)

Black olives (pitted)
Mild chile powder, ground
Feta cheese

Step 2

Grease an oven-safe dish with olive oil. Add the sliced zucchini in a snug single layer. Lay a chunk of feta over top & sprinkle with black olives. Season with a drizzle of olive oil, salt & pepper.

Step 3

Bake at 450°F for 20 min, or until the zucchini is tender & the feta melty. Enjoy with crusty bread. Yum!
