Oven, Baking dish, Pot (small), Stovetop, Knife
Step 1
Preheat the oven to 400°F. Crush the garlic using the side of a large knife & set aside.
Step 2
Add a drizzle of olive oil to the bottom of your baking dish. Wash the potatoes (no need to peel them). Arrange the whole chicken, potatoes & garlic in the dish.
Step 3
Add dabs of butter & a drizzle of oil over the chicken.
Step 4
Generously season all with salt & pepper. Bake for 15 min at 400°F.
Step 5
After 15 min, remove the dish from the oven. Add water (or stock).
Step 6
Lower the oven temperature to 350°F. Cook for 1 hour & 15 min.
Step 7
From time to time, stir the potatoes & spoon the pan juices over the chicken.
Step 8
When done, remove the chicken from the oven. Let rest before cutting & serving with the potatoes. Enjoy!
