Roasted Squash with Cheese Fondue

So simple, yet so decadent. Why hadn't we thought of fondue in a squash before?!

Acorn squash

Step 1

Preheat the oven to 400°F. Wash the squash, then cut off and reserve the top (about a 1-inch piece). Cut a thin slice from the bottom of the squash, if necessary, so it stands upright.

Step 2

Scoop out the seeds and stringy bits, using a spoon.


Step 3

In a small bowl, mix the garlic (crushed, minced, or grated) with a drizzle of olive oil.

Thyme (dried)

Step 4

Place the squash and its cap in a baking dish. Generously brush the inside of each piece with the garlic oil. Sprinkle with dried thyme and season with salt and pepper.

Step 5

Bake for 30 min at 400°F, or until the squash is tender when pierced with a fork.


Step 6

After 30 minutes, remove the squash from the oven and spoon the cheese into it. Return to the oven and bake for an additional 15 minutes.

Step 7

Meanwhile, cut the bread into slices or cubes and place on a baking sheet. Top with a drizzle of olive oil, a pinch of thyme, and a pinch of salt. Mix to coat the bread evenly.

Step 8

About 5 minutes before the squash is done cooking, add the baking sheet of bread to the oven.

Step 9

Remove the squash and bread from the oven and serve together, dipping the toasted bread in the melted cheese like fondue.
