Oven, Baking Dish
Preheat the oven to 425°F. Peel & slice the shallot.
Cut the butter into small pieces. Arrange half the butter in a baking dish. Top with the beef roast. Add the remaining butter & the shallot slices. Season generously with salt & pepper. Cook for 10 min.
After 10 min, remove the roast from the oven & baste it with the pan juices. Return it to the oven for another 10 min.
Remove from the oven & remove the string.
Cool slightly. Then slice & serve. Don't forget to plate it with the shallot gravy!
