Step 1

If using frozen scallops, defrost beforehand.

Rice (brown, long-grain)

Cook the mixed grains according to the package instructions.

Onion (yellow)

Peel & dice the onion.

Heat a drizzle of oil in pan over medium heat. Add the onion & scallops. Cook, stirring for 2 min.

Coconut milk
Curry paste (red)

Step 5

Add the curry paste & coconut milk. Stir to combine. Reduce the heat & simmer for 10 min.

Cilantro (fresh)
Rice (brown, long-grain)

Step 6

Serve the curried scallops over the mixed grains. Garnish with fresh cilantro (optional). Enjoy!
