If using frozen scallops, defrost beforehand.
Cook the mixed grains according to the package instructions.
Peel & dice the onion.
Heat a drizzle of oil in pan over medium heat. Add the onion & scallops. Cook, stirring for 2 min.
Add the curry paste & coconut milk. Stir to combine. Reduce the heat & simmer for 10 min.
