- Step 1
Wash & slice the mushrooms. - Step 2
Heat a drizzle of olive oil in a pan on medium heat. Add the mushrooms. Grate in the garlic & ginger. Season with salt & pepper. Cook for 5-7 min until the mushrooms are golden brown. - Step 3
Add about 1 cup of hot water per serving & the chicken to the pot. Cover & simmer for 20-25 min on low heat. - Step 4
Once the chicken is cooked, remove it from the pot & shred it. - Step 5
Add the peanut butter & noodles. Add a splash of soy sauce if you have any. Stir & continue cooking for 2-3 min until the noodles are cooked. - Step 6
Once the noodles are cooked, add the chicken & coconut milk. Season to taste. - Step 7
Serve the chicken & mushroom noodles in a bowl. Add the creamy broth & garnish additional coconut milk, chopped cilantro & chopped peanuts (optional). Enjoy!
