Defrost the corn. Cut the avocado in half. Remove the pit & the peel. Cut the avocado into chunks. Wash the baby tomatoes. Cut them in half. Peel & finely slice the red onion. - Step 2
Arrange the corn, tomatoes, avocado & red onion alongside each other on a plate. Add a pile of cilantro. Squeeze lemon juice over top. Season with salt & pepper. Enjoy!
