    Peel & finely chop the onions.
  • Step 2
    Cut the chicken into bite-sized pieces.
  • Step 3
    Heat a drizzle of olive oil in a pan, over medium heat. Add the onions & sauté for 2-3 min.

    Add the crushed tomatoes. Stir & continue to cook for another 3-4 min.
  • Step 5
    Add the broth & peanut butter. Mix well.
  • Step 6
    Add the chicken, mix & continue to cook for another 8-10 min, until the chicken is cooked through and the sauce has thickened.

    Meanwhile, peel & grate the carrots.
  • Step 8
    Slice the avocado in half. Remove the skin & thinly slice it.
  • Step 9
    Reheat the quinoa according to package instructions.
  • Step 10
    Serve the quinoa with the mafé-style chicken, grated carrots & sliced avocado. Re-season to taste & enjoy!
