Cheesy Chicken Quesadillas

- Step 1
Pat the chicken dry with a paper towel. Coat the chicken with taco seasoning on all sides. - Step 2
Heat a drizzle of oil in a pan over medium-high heat. Sear the chicken on one side, undisturbed for 7-8 min. Flip the chicken & cook for 3-4 more min, or until fully cooked (internal temperature reaches 165°). Transfer to a plate to cool slightly. - Step 3
Wash the pepper & remove the seeds. Dice the pepper. - Step 4
Slice the chicken. - Step 5
Wipe the first pan clean & heat another drizzle of oil over medium heat. Press a tortilla into the oiled pan. On half of the tortilla, add half the cheese. Layer on sliced chicken & diced peppers. Add the remaining cheese on top. - Step 6
Fold the empty half of the quesadilla over the fillings. Use a spatula to press it closed for 1 min. Carefully flip the quesadilla over. Cook 3-4 min until the bottom half is crisp & the cheese is melted. Remove from the heat. - Step 7
Cut the quesadilla in half or thirds. Serve with sour cream, salsa & a squeeze of lime if you have! Enjoy!
