Chicken breast

1 cup
White rice (long grain, cooked)

1 cup
Mixed vegetables (frozen)

1 tbsp
Soy sauce

1/4 clove
Garlic

- Step 1
Heat a drizzle of olive oil in a pan, over medium heat. Add half of the grated garlic & sauté for 30 secs. - Step 2
Add the frozen mixed veggies to the pan. Season with salt & pepper. Cook for 2-3 minutes, stirring. - Step 3
Add the cooked rice & soy sauce. Stir & continue cooking for another 2-3 mins. - Step 4
Meanwhile, heat a drizzle of olive oil in a second pan, over medium-high heat. Add the remaining grated garlic & sauté for 30 secs. - Step 5
Pat the chicken dry & add it to the pan. Brown it for 2 min on the first side. Season with salt & pepper. Turn over the chicken & cook for another 8 min, or until cooked through. - Step 6
Serve the veggie fried rice in a bowl with sliced grilled chicken. Top with minced chives, if you have any & re-season to taste. Enjoy!
