  • Step 1
    Cook the rice according to the package instructions.
  • Step 2
    Cut the chicken into large chunks.
  • Step 3
    Heat a drizzle of vegetable oil in a pan over medium-high heat. Add the chicken. Season with salt & pepper. Cook, stirring for 2 min.
  • Step 4
    Add the curry powder & stir.
  • Step 5
    Add the coconut milk, sugar, a pinch of salt & a splash of water. Reduce the heat to low, cover & simmer for 5 min.
  • Step 6
    Serve the curried chicken over fluffed rice. Garnish with chopped cilantro (optional). Season with salt & pepper. Enjoy!
