Air Fryer Greek-Style Chicken & Potatoes

Chicken thighs (bone-in, skin on)
1/2 cup
Cherry tomatoes
1/4
Red onion
1/4 lb
Fingerling potatoes
1/2
Lemon
1/4 cup
Feta cheese (crumbled)

Kalamata olives

- Step 1
Preheat the air fryer to 375°F. Peel & slice the onion into thin wedges. Clean & halve the potatoes. Drain & roughly chop the olives. - Step 2
Pat dry the chicken with a paper towel & arrange in the air fryer basket or tray, skin side up. Add the potatoes, tomatoes & sliced onion to the tray. Season with salt, pepper & oregano if you have any. Add a generous drizzle of olive oil over top. Air fry at 375ºF for 30 min or until the chicken is cooked through. - Step 3
Plate the chicken, potatoes & veggies. Garnish with the chopped olives & crumbled feta. Add a squeeze of lemon & serve. Enjoy!
