Pork Chops with Blistered Tomatoes

Pork chops (bone-in)
1/2 lb
Cherry tomatoes
1/3 cup
White rice (long grain)
1 tsp
Italian seasoning
optional
1 tbsp
Parsley (fresh)

- Step 1
Cook the rice according to the package instructions. - Step 2
Wash & pat dry the cherry tomatoes. Heat a drizzle of oil in a pan over medium heat. Add the tomatoes, salt, pepper & Italian seasoning. Gently stir it all together. Cover & cook for 3-5 min, shaking the pan halfway through. - Step 3
Heat another drizzle of oil in a separate pan. Add the pork chops. Season with salt & pepper. Cook for 3-5 min on each side, or until done to your liking. - Step 4
Remove both the tomatoes & the rice from the heat. - Step 5
Spoon the fluffed rice onto a serving plate. Top with pork chops & blistered tomatoes. Season with salt & pepper. Pour the tomato & herb pan juices over top. Garnish with chopped parsley (optional). Enjoy!
