Stovetop, Pot (small), Grater, Pot (large)
Cut the pork into 1" thick slices.
Heat a drizzle of oil in a pot over medium heat. Add the pork. Cook for 2 min on each side.
Peel & mince the shallot.
Peel & mince the garlic.
Add the garlic, shallot, curry powder & grated ginger to the pot. Pour in the white wine. Add the chicken stock. (Or you could use a bouillon cube & water!) Stir it all together.
Add large chunks of the pineapple.
Reduce the heat to low. Cover & simmer for 10-15 min.
Cook the rice according to the package instructions.
Serve the pork & sauce over a fluffy bed of rice. Season with salt & pepper. Enjoy!
