Preheat the oven to 350°F. Wash & thinly slice the pear. Shell & roughly chop the pistachios.
In a small bowl, mix together the ricotta, salt, pepper & dried herbs.
Gently separate the filo sheets.
Lay a filo sheet on a piece of parchment paper. Spread ricotta over the center. Top with pear & pistachios. Season with salt & pepper. Brush the edges of the filo sheet with olive oil. Then fold in all sides to form a square.
Transfer the parchment paper of squares to a baking sheet. Lightly brush the squares with oil. Finish with a drizzle of honey. Bake for 15 min at 350°F.
Once the squares are crisp & golden, remove from the oven. Serve with a bed of arugula. Enjoy!
