Step 1
Cook the frozen peas in a pot of salted boiling water for 3-5 min. Drain & set aside.
Step 2
Using the same pot, heat a drizzle of oil over medium heat. Sauté the chopped shallots until softened. Add the shallots, peas, mint, coconut milk, salt, pepper & another drizzle of oil to a blender. Purée until smooth. Garnish with paprika (optional). Enjoy!
