Hidden Veggie Saucy Pasta

Ingredients for 1

Pasta (rigatoni)

Yellow onion
1/2 cup
Tomatoes (canned, crushed)
1/2
Carrots (fresh)
1/4
Bell pepper (assorted)

Zucchini
2 tsp
Oregano (dried)
1/4 tsp
Garlic powder

Blender, Immersion blender, Pot (large), Frying pan, Food processor, Knife

- Step 1
Peel & dice the carrots. - Step 2
Rinse & dice the zucchini. - Step 3
Wash the bell pepper & cut around the seeds. Dice the pepper. - Step 4
Peel & dice the onion. - Step 5
Heat a drizzle of oil in a pan over medium-high heat. Add all the veggies with a pinch of salt. Stir & cover the pan to allow the veggies to steam for about 3-4 min until slightly softened. Uncover & add oregano. We love garlic powder here too! Stir & cook for 2-3 more min. - Step 6
Add the crushed tomatoes & stir it all together. Simmer for 5 more min the remove from the heat. As it simmers, boil a pot of water. - Step 7
Season the boiling water with salt. Add the pasta & cook according to package instructions. - Step 8
As the pasta cooks, add all the veggies to a food processor or blender & purée until smooth. Add a ladle of the pasta cooking water to thin it out if needed. - Step 9
Drain the pasta & add it back to the pot. Stir in the veggie sauce. If you have any parmesan cheese at home, grate that in along with some red pepper flakes for a nice kick! Serve & enjoy!
