Pasta with Red Pesto

Pasta (rigatoni)
2 tbsp
Olive oil
1/2 tbsp
Pine nuts
1/2 clove
Garlic
1 oz
Parmesan
1/3 cup
Sun-dried tomatoes

Cook the pasta according to the package instructions. Reserve a bit of the cooking liquid. - Step 2
Peel the garlic. - Step 3
Before making the pesto, set aside a little bit of parmesan & pine nuts for garnish. - Step 4
In a blender or food processor, add the rest of the parmesan & pine nuts. Then add the sun-dried tomatoes, olive oil & garlic. Season with salt & pepper. Blend until smooth. Thin the pesto with a splash of the pasta cooking liquid. - Step 5
Toss the drained pasta with the pesto. Top with the reserved parmesan & pine nuts. Enjoy!
