- Step 1
Cook the pasta in a pot of salted boiling water according to the package instructions. - Step 2
Grate the lemon zest into a bowl & set aside. - Step 3
Juice the lemon. - Step 4
Drain the pasta 1 to 2 min before it's done cooking. Reserve some pasta cooking liquid (about 1/4 cup per serving). - Step 5
In a pan over low heat, melt the butter. Add the lemon juice & stir for 2 min. - Step 6
Add half of the lemon zest. Season with salt & pepper. The sauce should thicken slightly. - Step 7
Transfer the cooked pasta to the pan. Add a bit of the pasta cooking liquid. Increase the heat to medium. - Step 8
Add the grated parmesan & cook for 2 min, or until the cheese melts into the sauce. - Step 9
Simmer over low heat for 2 more min, stirring frequently. Season with salt & pepper. - Step 10
Remove from heat. Serve the pasta garnished with grated parmesan & remaining lemon zest. Mangia!
