Step 1
Preheat the oven to 375°F. Peel & dice the potatoes.
Step 2
In a small bowl, mix together the olive oil, parmesan, bread crumbs, salt & pepper.
Step 3
Add the green beans & diced potatoes to a baking pan.
Step 4
Top with half of the bread crumb mixture. Mix it all together.
Step 5
Bake for 10-15 min at 375°F.
Step 6
Pat the chicken dry with a paper towel. Lay the chicken between two sheets of plastic wrap. Using a mallet or rolling pin, pound the chicken breast evenly & remove from the plastic. Coat the chicken with the remaining bread crumb mixture.
Step 7
Remove the veggies from the oven. Lay the breaded chicken over the veggies. Sprinkle any remaining bread crumbs over top. Add another drizzle of olive oil (optional). Season with salt & pepper. Cook for 15-20 min, or until all is cooked through & crispy.
Step 8
Remove from the oven. Enjoy!
