Stovetop, Frying pan, Pot (small)
In a pot of boiling salted water, cook the green beans for 3-5 minutes, or until crisp-tender. Drain & set aside.
Toast the almonds in a frying pan over low heat. Shaking the pan regularly. Remove from the pan when lightly browned, about 2 minutes. Set aside.
In the same pan, add a drizzle of olive oil & turn the heat up to medium-high. Pat the cod bone dry with a paper towel. Lay in the pan & cook for 2-3 minutes on each side or until cooked through.
Serve the cod over a bed of green beans, garnished with toasted almonds & lemon wedges. Season with salt & pepper. Enjoy!
