Stovetop, Pot (small), Frying pan, Whisk, Colander
Wash, trim & cut the broccoli into florets.
Add the broccoli to a pot of salted boiling water. Cook for 7-10 min, or until fork-tender.
Peel & mince the shallots.
Add the shallots to a pot over medium heat. Add a pinch of salt & stir.
Add the vinegar to the pot. Stir as it slowly evaporates.
Add most of the butter. Season with salt & pepper. Reduce the heat to low. Whisk & cook for 2 min.
Drain the broccoli. Use a fork to mash the broccoli with salt, pepper & the rest of the butter.
Heat a drizzle of oil in a pan over medium-high heat. Add the cod. Cook for 3 min on each side, or until the cod is cooked through.
Add the mashed broccoli to a serving plate. Arrange the cod over the broccoli. Season with salt & pepper. Drizzle the shallot-butter sauce over top. Enjoy!
