Stovetop, Pot (small), Colander, Frying pan, Whisk
Step 1
Wash the baby potatoes. Add them to a pot of salted boiling water. Cook for 7 min.
Step 2
Wash & trim the green beans. Add them to the sam pot as the potatoes. Cook the beans & potatoes together for 3 min.
Step 3
Peel & mince the shallot. Heat a drizzle of oil in a pan over medium-high heat. Add the shallot. Stir.
Step 4
Add the red wine vinegar & stir.
Step 5
Reduce the heat to low. Add the butter, whisking constantly until the sauce comes together. Season with salt & pepper. Turn off the heat & cover to keep warm.
Step 6
Heat another drizzle of oil in a separate pan over medium-high heat. Add the cod. Cook for 2-3 min on each side, or until cooked through.
Step 7
Drain the potatoes & green beans. Serve them alongside the cod. Season all with salt & pepper. Drizzle with the shallot-butter sauce. Enjoy!
