One-Pan Salmon with Asparagus & Peas

Orzo

1/4 bunch
Asparagus (fresh)

1/2 cup
Peas (frozen)

3/4 cup
Veggie broth

- Step 1
Preheat the oven to 400°F. Trim the woody bottoms on the asparagus, then small dice. - Step 2
Rinse & roughly chop the parsley. - Step 3
Add a drizzle of olive oil to a baking dish. Add parsley, lemon juice, salt, pepper & mix it all together. Dip the salmon in the sauce to coat on all sides. Transfer the fish to a plate & chill in the fridge. - Step 4
Add in peas, asparagus, orzo & vegetable broth (about 3/4 cup per serving). Mix & cover with parchment paper. Bake in the oven at 400°F for 20 min. - Step 5
Remove the dish from the oven. Add grated parmesan & mix it all together. Arrange the marinated salmon on top. Add a few slices of lemon if you have any left. Return everything to the oven for 15-20 min, until the fish is fully cooked. Serve & enjoy!
