- Step 1
Preheat the oven to 400°F. Peel & slice the red onion into wedges. - Step 2
Clean & halve or quarter the mushrooms, depending on their sizes. - Step 3
If desired, peel the butternut squash. Halve the squash & remove the seeds. Cut it into small cubes. - Step 4
Slice the sausage into bite-sized pieces. - Step 5
On a baking sheet, add the gnocchi, squash, mushrooms & onions. Add a drizzle of olive oil. Season with Italian seasoning, salt & pepper. Mix it together. - Step 6
Add the sausage slices on top of the vegetables & roast for 25-30 min at 400°F. - Step 7
Remove the tray from the oven & top with a few shavings of parmesan on top. Serve & enjoy!
