- Step 1
Peel & cube the potatoes. - Step 2
In a pot of salted boiling water, add the potatoes. Cook for 12-15 min, over medium heat. - Step 3
Meanwhile, wash & cut the broccoli into bite-sized pieces. - Step 4
In a second pot of salted boiling water, add the broccoli. Cook for 5-6 min, until tender. Drain the broccoli & set aside to keep warm. - Step 5
Meanwhile, in a third pot of boiling water, cook the eggs for 6 min. As the eggs cook, prep a bowl of ice water. After 6 min, transfer the eggs to the ice water to stop the cooking. Once cool to touch, peel off the shells & set aside. - Step 6
Once cooked through, reserve a ladle of cooking water & set aside. Drain the potatoes & add them back to the pot with the garlic & herb spreadable cheese. Mash using a fork or a potato-masher until smooth & creamy. If needed, add a splash of the reserved cooking water for desired consistency. - Step 7
Serve the cheesy mashed potatoes on a plate with the broccoli & soft-boiled eggs cut in half. Garnish with freshly chopped chives & re-season to taste. Enjoy!
