1 cup
White rice (long grain, cooked)

1 cup
Mixed vegetables (frozen)

1 tbsp
Soy sauce

1/4 clove
Garlic

- Step 1
Heat a drizzle of olive oil in a pan, over medium heat. Add the grated garlic & sauté for 30 secs. - Step 2
Add the frozen mixed veggies to the pan. Season with salt & pepper. Cook for 2-3 minutes, stirring. - Step 3
Add the cooked rice & soy sauce. Stir & continue cooking for another 2-3 mins. - Step 4
Meanwhile, melt a dab of butter in a second pan over medium-high heat. Crack the eggs & fry them, undisturbed, for about 2-3 mins for sunny-side up, or to your liking. Season with salt & pepper, then remove from the heat. - Step 5
Serve the veggie fried rice in a bowl with fried egg. Top with minced chives, if you have any & re-season to taste. Enjoy!
