Ingredients for 1

Wheat noodles

1/2 handful
Green beans (fresh)

1/2
Carrots (fresh)

3 oz
Raw shrimp

1 tbsp
Hoisin sauce

1 tsp
Soy sauce

1 wedges
Lime

- Step 1
Boil noodles in a pot of boiling salted water according to package instructions. Once the noodles are cooked, use tongs to lift them out of the water & into a colander, keeping the pot of boiling water on the stovetop. Rinse the noodles briefly with cool water & set aside. - Step 2
In the same pot, boil the green beans for 2-3 min, until just tender. Drain. - Step 3
Using a vegetable peeler, slice the carrot into long ribbons. - Step 4
If necessary, peel & devein the shrimp. Heat a drizzle of neutral oil in a frying pan over medium heat. Add the shrimp & cook for 2-3 min per side, until just pink & cooked through. Remove shrimp & keep warm. - Step 5
In the same frying pan, add the hoisin sauce, soy sauce & lime juice. Add 1-2 tsp water per serving to thin out the sauce, if needed. Cook for 1-2 min, until warmed through. - Step 6
Add the noodles, shrimp & veggies to the pan. Toss gently to coat everything with sauce. Remove from the heat. - Step 7
Plate the noodles in a bowl, garnished with fresh cilantro (optional) & sesame seeds, if you have any. Serve & enjoy!
Recipe tip
If you like spice, try adding a pinch of chili flakes or a drizzle of chili oil to these noodles!
