Rice noodles

Cucumber

Peanuts

1 clove
Garlic

Fish sauce

- Step 1
Cook the rice noodles according to package instructions. Once cooked, drain & rinse with cool water. - Step 2
Wash the cucumber. Cut it in half lengthwise & scoop out the seeds. Slice the cucumber & set aside. - Step 3
Roughly chop the peanuts & set aside. - Step 4
Heat a drizzle of oil in a frying pan over medium heat. Add the garlic (grated or minced) & cook for about 30 sec, until fragrant. - Step 5
Add the ground pork & break it up with a spoon. Cook until browned & cooked through (no pink remaining), about 5-6 min. - Step 6
Add the fish sauce, soy sauce, honey & 1 tbsp water per serving to the pan with the pork. Simmer for 1-2 min to create a sauce. - Step 7
Add the cooked rice noodles to the pan with the sauce & toss to coat. - Step 8
Transfer the noodles to a bowl. Top with the sliced cucumber & chopped peanuts. Garnish with torn fresh mint leaves & a drizzle of sriracha sauce (optional). Serve & enjoy!
