Mushroom & Barley Soup

Yellow onion

Step 1

Peel & finely slice the onion.

Mushrooms (white)

Step 2

Clean & slice the mushrooms.

Leeks

Step 3

Trim the dark green & root ends of the leek. Wash the leek. Slice it into thin rings.

Step 4

Heat a drizzle of olive oil in a pot over medium heat. Add the onion, leek & mushroom. Cook, stirring for 3 min.

Soy sauce
Vegetable broth (liquid)
Barley (pearl)

Step 5

Add the barley, soy sauce & veggie stock. Stir to combine.

Step 6

Bring to a simmer. Then reduce the heat to low, cover & simmer for 20-30 min. Be sure the barley is cooked to your liking! Add more stock, if needed.

Parsley (fresh)

Step 7

Ladle the soup into bowls. Garnish with fresh parsley (optional). Season with cracked black pepper & a final drizzle of olive oil. Enjoy!
