Veggie broth
1/2 cup
Pasta (elbow macaroni)
1/4 cup
Kidney beans (canned)
1/4 cup
Tomatoes (canned, diced)
1 clove
Garlic
1 cup
Spinach (fresh)
1 Stalk
Celery
1/4
Yellow onion

2 tbsp
Parmesan (grated)

- Step 1
Wash & dice celery into small pieces. - Step 2
Peel & chop garlic. - Step 3
Peel & chop onion. - Step 4
Heat a drizzle of oil in a pot over medium heat. Add onion, garlic & celery. Sauté for 3 min or until veggies have softened. - Step 5
Add diced tomatoes & season with salt & pepper. Sauté for an additional 3 min. - Step 6
Add broth & bring to a boil. - Step 7
Stir in beans & macaroni pasta. Cover & cook for 8 min or until pasta is cooked to your liking. - Step 8
Add spinach & stir until wilted. Remove soup from the heat & serve, topped with parmesan cheese. Enjoy!
