Ingredients

Rice

Step 1

Cook the rice according to the instructions on the box.

Chicken breast

Step 2

Add a drizzle of olive oil to a frying pan on medium heat and add the chicken.

Mixed Mexican spices

Step 3

Add the spices and cook the chicken for 4 minutes on each side.

Step 4

Add about 2 tablespoons of water (per serving) and salt & pepper. Stir and let the sauce thicken for 2 minutes.

Rice

Step 5

Once the rice is cooked, drain and divide into bowls.

Chicken breast
Avocado
Sweet corn (canned)
Red bean

Step 6

Top with the chicken, corn, drained beans, sliced avocado, salt, pepper, pan drippings and a drizzle of olive oil.

Cilantro (fresh)

Step 7

Optional: add some fresh chopped cilantro!

Step 8

Olé! Dinner is served.
