  • Step 1
    Preheat the oven to 450°F. Wash the veggies and quarter the tomatoes.
  • Step 2
    Thinly slice the zucchini in half-moons.
  • Step 3
    Remove the skin and quarter the onions.
  • Step 4
    Add the vegetables to an oven-safe dish with salt, pepper, herbs and olive oil. Mix to combine.
  • Step 5
    Place the feta on top and add another drizzle of olive oil, salt and pepper.
  • Step 6
    Bake at 450°F until the feta is golden. (about 20 minutes)

    Serve hot with a salad or bread. It's as simple as that!
