recipe
- Step 1
Drain & roughly chop the olives. - Step 2
Rinse & halve the tomatoes. - Step 3
Rinse, dry & roughly chop the parsley. - Step 4
Pat the salmon dry with a paper towel. Season all over with salt & pepper. We also love adding dried oregano & garlic powder if you have! - Step 5
Heat a drizzle of oil in a pan over medium-high heat. Add the salmon to the pan & cover. Sear on one side until browned, about 3-4 min. Remove the salmon & set aside. - Step 6
Add rice & water (double the amount of rice) to the skillet. Stir & bring to a boil. - Step 7
Lay the salmon over the rice & reduce the heat. Cover & simmer until the rice & salmon are fully cooked. About 10 min. - Step 8
Once the rice is cooked, give it a stir. Add tomatoes, olives & crumbled feta. Garnish with freshly chopped parsley & a squeeze of lemon (both optional). - Step 9
Serve with extra lemon juice (optional) & enjoy!
