Pasta (orzo)
2 tbsp
Sun-dried tomatoes
2 tbsp
Kalamata olives
1 oz
Mozzarella (mini)
1 tbsp
Pesto
1/4 cup
Cherry tomatoes
1/2
Lemon

- Step 1
Wash & halve the cherry tomatoes. - Step 2
Roughly chop Kalamata olives. - Step 3
Roughly chop sun-dried tomatoes. - Step 4
In a pot of salted boiling water, cook the orzo according to package instructions. Strain & rinse under cool water to stop the cooking. Transfer to a large bowl. - Step 5
Add in pesto, sun-dried tomatoes, Kalamata olives, cherry tomatoes & mini mozzarella balls. Mix it all together. Serve with a fresh squeeze of lemon. Enjoy!
