  • Step 1
    Cook the rice according to the package instructions.
  • Step 2
    Cut the chicken into pieces. Heat a drizzle of oil in a pan over medium heat. Add the chicken, paprika, salt & pepper. Cook, stirring for 5 min, or until golden brown.
  • Step 3
    In a small bowl, mix together the yogurt, lemon juice, salt & pepper.
  • Step 4
    Wash the tomatoes & cucumber. Cut the baby tomatoes in half. Cut the cucumber into cubes.

    Add the cucumbers, tomatoes, salt, pepper & a drizzle of olive oil to a bowl. Add chopped mint (optional). Stir to combine.
  • Step 6
    Fluff the cooked rice.
  • Step 7
    Arrange the chicken, salad & rice in a serving bowl.
  • Step 8
    Pour the yogurt sauce over top. Garnish with lemon zest, mint leaves (optional) & a drizzle of olive oil. Season with salt & pepper. Enjoy!
